A delicious and creamy chicken pasta dish that combines tender chicken with rich garlic parmesan sauce, perfect for weeknight meals.

Ingredients

  • 2 large chicken breasts or thighs, boneless & skinless, cut into strips
  • 12 oz pasta (fettuccine, penne, or spaghetti)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 5 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • Salt & black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Optional: red pepper flakes, fresh spinach

Instructions

  1. Boil salted water in a large pot and cook your pasta until al dente. Drain and set aside.
  2. Season the chicken strips with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook the chicken until golden brown and just cooked through. Transfer to a plate.
  3. In the same skillet, melt butter, then sauté minced garlic until it becomes fragrant.
  4. Pour in the chicken broth and heavy cream. Stir well and let it simmer to thicken slightly.
  5. Add the grated Parmesan cheese, mixing until it melts and forms a smooth sauce. Adjust seasoning if needed.
  6. Return the cooked chicken to the skillet and toss in the pasta (and spinach, if using) to coat in the delicious sauce.
  7. Garnish with chopped parsley and extra Parmesan before serving.

Notes

For a vegetarian option, replace the chicken with zucchini or bell peppers and use vegetable broth instead of chicken broth. Grate fresh Parmesan just before using for better melting.
