A delightful skillet dish merging tender chicken, earthy mushrooms, and fresh spinach in a luxurious creamy sauce, perfect for quick weeknight dinners.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the chicken pieces, seasoning generously with salt and pepper. Cook until browned and cooked through, around 5-7 minutes.
  3. Stir in minced garlic and sliced mushrooms, cooking for an additional 3-4 minutes until mushrooms are tender.
  4. Toss in fresh spinach, stirring until wilted, about 2 minutes.
  5. Pour in heavy cream and add grated Parmesan cheese, stirring until sauce thickens.
  6. Serve warm, enjoying with rice, mashed potatoes, or pasta.

Notes

For a lighter version, substitute heavy cream with Greek yogurt. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
