Crispy panko-crusted chicken breasts topped with rich marinara and bubbling cheese, perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs
  • 3 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 cups marinara sauce
  • 1 cup freshly grated mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Prepare the chicken by patting the breasts dry and seasoning them generously with salt and pepper.
  3. Set up your breading station: Place flour in one bowl, beaten eggs mixed with minced garlic in another, and combine panko breadcrumbs with Italian seasoning in a third bowl.
  4. Dredge the chicken: Coat each breast in flour, then dip in the egg wash before thoroughly covering it with the panko mixture.
  5. Sear the chicken: In a large skillet, heat olive oil over medium heat until shimmering. Add the breaded chicken and cook for about 4-5 minutes on each side until golden brown.
  6. Assemble in the baking dish: Transfer the seared chicken to the prepared dish. Spoon marinara sauce over each piece, then top generously with mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown.

Notes

Serve over spaghetti, with garlic bread, or a fresh salad. Perfectly paired with a glass of Chianti.
