A comforting and quick dish featuring succulent chicken breasts simmered in a rich coconut milk sauce, infused with aromatic garlic and ginger.

  • 2 chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Season the chicken breasts generously with salt and pepper. Add them to the pan, cooking for about 5-7 minutes on each side until they’re beautifully browned and fully cooked through.
  3. Once cooked, remove the chicken from the pan and set it aside.
  4. In the same pan, add the minced garlic and ginger. Sauté for 1 minute until fragrant.
  5. Pour in the coconut milk, stirring well to combine. Bring the mixture to a gentle simmer.
  6. Return the chicken to the pan, ensuring each piece is thoroughly coated in the coconut sauce.
  7. Let it simmer for an additional 5 minutes until the sauce thickens slightly.
  8. Serve hot, garnished with fresh cilantro!

Notes

Serve with fluffy jasmine rice or quinoa to soak up the rich coconut sauce. Consider adding red pepper flakes for extra heat.
