A rich and creamy loaded baked potato soup that’s easy to prepare and perfect for cozy nights.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 cup shredded cheddar cheese
  • 4 slices of cooked bacon, crumbled
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In your crock pot, combine the diced potatoes, chopped onion, minced garlic, and broth.
  2. Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  3. Once cooked, grab a potato masher and mash the mixture slightly; this gives your soup a great texture.
  4. Stir in the heavy cream, shredded cheddar cheese, crumbled bacon, and sour cream until well mixed.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with freshly chopped green onions.

Notes

For a lighter version, replace heavy cream with milk or a dairy-free alternative. You can also swap potatoes for sweet potatoes.
