  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 1 cup freshly grated Parmesan cheese (about 100g)
  • 1 cup heavy cream (240ml)
  • 1/2 cup chicken broth (120ml)
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons unsalted butter, softened (about 30g)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Prep the chicken: Start by patting the chicken breasts dry with paper towels. Season each side generously with salt, pepper, and Italian seasoning.
  2. Make the sauce: In a bowl, whisk together the heavy cream, chicken broth, minced garlic, chopped sun-dried tomatoes, optional red pepper flakes, and softened butter until well combined.
  3. Layer in the crockpot: Place the seasoned chicken in the bottom of the crockpot. Pour the creamy sauce mixture over the chicken, ensuring it’s evenly distributed.
  4. Cook: Cover and let it cook on low for 4-5 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. Add cheese: About 15 minutes before serving, sprinkle the grated Parmesan cheese over the chicken and stir it into the sauce for a creamy finish.
  6. Adjust the flavor: Taste the sauce and adjust the seasoning with more salt and pepper if needed. Garnish with fresh basil or parsley for a pop of color.
  7. Final touch: If the sauce appears too thin, make a quick cornstarch slurry with a bit of water. Whisk it in, and cook on high for an additional 10-15 minutes until thickened.
