A comforting dish featuring seared chicken thighs in a rich creamy garlic sauce, perfect for weeknight dinners.

  • 8 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter
  • 6 cloves garlic (minced)
  • 1/2 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Pat the chicken thighs dry and season them generously with salt, black pepper, and garlic powder.
  2. In a large skillet, heat the olive oil over medium-high heat. Place the chicken thighs skin-side down and sear for 6-8 minutes until they are golden brown and crispy.
  3. Flip the chicken over and cook for an additional 5-6 minutes until fully cooked and no longer pink in the center. Remove the chicken from the skillet and set aside.
  4. Reduce the skillet heat to low, add the unsalted butter, and sauté the minced garlic for about 30 seconds until fragrant.
  5. Pour in the chicken broth, scraping up the browned bits from the bottom of the pan. Allow it to simmer for about 3-4 minutes.
  6. Stir in the heavy cream, letting it simmer for 2-3 minutes until it thickens slightly. Lower the heat and mix in the freshly grated Parmesan cheese until smooth and creamy.
  7. Return the chicken to the skillet, spooning the garlic cream sauce over each piece. Garnish with freshly chopped parsley and serve immediately.

Notes

For a lighter version, substitute low-fat cream or use chicken breasts. Consider adding sautéed mushrooms or spinach for extra nutrition.
