A comforting one-skillet dish featuring juicy chicken thighs in a creamy garlic sauce, perfect for weeknight dinners or special gatherings.

  • 8 bone-in, skin-on chicken thighs (About 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp butter (Unsalted)
  • 6 cloves garlic (Minced)
  • 1/2 cup chicken broth (Low sodium)
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese (Freshly grated)
  • 2 tbsp fresh parsley (Chopped, for garnish)

Instructions

  1. Pat the chicken thighs completely dry using paper towels and season both sides generously with salt, black pepper, and garlic powder.
  2. In a large skillet, heat the olive oil over medium-high heat and place the chicken thighs skin-side down. Sear for 6-8 minutes until golden brown and crispy, then flip and cook for an additional 5-6 minutes until cooked through. Remove and set aside.
  3. Reduce heat to medium, add butter to the skillet, and once melted, add minced garlic. Sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and simmer for 3-4 minutes, scraping up any brown bits.
  5. Gently stir in the heavy cream and simmer for an additional 2-3 minutes until slightly thickened.
  6. Add the Parmesan cheese to the sauce, stirring until melted and creamy.
  7. Return the chicken to the skillet, spooning the sauce over it, and garnish with chopped parsley before serving.

Notes

For extra flavor, marinate the chicken beforehand. Leftovers can be stored in an airtight container for 3-4 days.
