A comforting dish featuring seared chicken thighs, earthy mushrooms, and a rich, creamy garlic sauce, perfect for weeknight dinners.

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Heat butter and olive oil in a skillet over medium-high heat; sear chicken thighs skin-side down for 5-7 minutes until golden. Flip and cook for 2-3 minutes. Remove and set aside.
  3. Add diced mushrooms and minced garlic to the skillet; sauté for 4-5 minutes until browned.
  4. Pour in chicken broth, scraping the skillet; let reduce slightly, then add heavy cream and simmer until thickened.
  5. Return chicken thighs to the skillet, cover, and cook on low for 10-12 minutes until tender.
  6. Garnish with parsley or thyme and serve directly from the skillet.

Notes

For best results, ensure the pan is hot before adding the chicken. Experiment with different mushrooms and herbs for variety.
