A rich and creamy pasta dish featuring tender chicken, garlic, and Parmesan cheese, perfect for any occasion.

Ingredients

  • 2 large boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb (450 g) twisted pasta (fusilli, penne, or rotini)
  • 3 Tbsp unsalted butter, divided
  • 45 cloves fresh garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup grated Parmesan cheese (freshly grated preferred)
  • 1 tsp Italian seasoning, divided
  • ¼ tsp red pepper flakes (optional)
  • Fine salt & black pepper to taste
  • 2 Tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Boil pasta in salted water until al dente, reserving ½ cup of pasta water before draining.
  2. Season and sear chicken in a large skillet with butter until golden and cooked through. Transfer to a plate.
  3. Add remaining butter to the skillet, stir in minced garlic and red pepper flakes, and cook until fragrant.
  4. Deglaze the pan with chicken broth, then add heavy cream and Italian seasoning; simmer gently.
  5. Gradually stir in Parmesan cheese until melted and the sauce is smooth.
  6. Combine the chicken and drained pasta in the skillet, tossing until well coated, adding reserved pasta water as needed.
  7. Adjust seasoning with salt and pepper, then garnish with parsley before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half or a plant-based alternative.
