  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped

  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Once al dente, drain and set it aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic, sautéing until fragrant—just about a minute.
  4. Season the chicken breasts with salt and pepper. Place them in the skillet and cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken and slice into strips.
  5. In the same skillet, pour in the heavy cream and bring it to a gentle simmer.
  6. Stir in the parmesan cheese, allowing it to melt into a smooth sauce.
  7. Add the sun-dried tomatoes and cooked penne pasta into the creamy mixture. Toss to ensure everything is well-coated.
  8. Return the sliced chicken to the skillet, mixing well with the pasta and sauce.
  9. Serve hot, garnished with fresh basil for that aromatic finish.

Notes

For added richness, consider adding a splash of white wine before the cream. Feel free to swap chicken for shrimp or add fresh spinach for extra nutrients.
