A cozy and creamy pasta dish that combines tender chicken, sun-dried tomatoes, and Parmesan in a rich sauce, perfect for any occasion.

  • 12 ounces fettuccine pasta
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup sun-dried tomatoes, chopped
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Boil a large pot of salted water and cook the fettuccine according to the package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning, then cook for 6-7 minutes on each side, until fully cooked. Remove from the skillet and slice into bite-sized pieces.
  3. Sauté minced garlic in the skillet for about 30 seconds until fragrant, being careful not to let it burn.
  4. Pour in the heavy cream and chicken broth, bringing it to a gentle simmer for 3-5 minutes until slightly thickened.
  5. Stir in chopped sun-dried tomatoes and grated Parmesan cheese until everything melds into a creamy sauce.
  6. Add the cooked fettuccine and sliced chicken to the skillet, tossing gently to coat the pasta and chicken in the sauce.
  7. Garnish with fresh basil and additional Parmesan cheese if desired. Serve and enjoy!

Notes

For added fiber, consider using whole wheat fettuccine. Store leftovers in an airtight container in the refrigerator for 3-4 days.
