A quick and flavorful dish featuring tender chicken breasts coated in creamy pesto and topped with melted mozzarella cheese.

  • 34 small boneless skinless chicken breasts (about pounds)
  • 1 (8 oz) block cream cheese (softened)
  • 1/3 cup basil pesto
  • 1+ cups shredded mozzarella cheese
  • Fresh chopped tomatoes and basil for garnish (optional)

Instructions

  1. Preheat your oven to 375° F. Grease a 9×13 baking dish with a little olive oil or cooking spray.
  2. In a small bowl, combine the softened cream cheese and basil pesto. Stir until the mixture is creamy and smooth.
  3. Place the chicken breasts in the greased baking dish, ensuring they are evenly spaced.
  4. Use a spoon or spatula to generously spread the creamy pesto mixture over the chicken breasts, making sure each piece is covered.
  5. Sprinkle the shredded mozzarella cheese on top, using at least a cup or more if you’re a cheese lover!
  6. Bake in the preheated oven, uncovered, for 30-45 minutes, until the chicken is cooked through (internal temperature of 165°F).
  7. For an extra touch, garnish with fresh chopped tomatoes and basil just before serving. Enjoy!

Notes

For added flavor, marinate the chicken in pesto for a few hours before cooking.
