A comforting meal that combines tender chicken, creamy sauce, and fluffy rice, perfect for busy weeknights.

  • 1 lb chicken breasts
  • 1 cup rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until softened and fragrant.
  3. Season the chicken breasts with salt and pepper. Add them to the skillet and cook until browned on both sides.
  4. In a separate bowl, mix together the cream of chicken soup, chicken broth, and heavy cream. Pour this mixture over the chicken in the skillet.
  5. Add the rice and stir well to ensure all ingredients are combined.
  6. Cover the skillet and reduce heat to low. Let it simmer for 20-25 minutes, or until the chicken is cooked through and the rice is tender.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

For a healthier twist, consider using brown rice. You can also substitute the cream of chicken soup for a mushroom version.
