A comforting dish featuring creamy Greek yogurt and perfectly cooked eggs nestled in sautéed spinach, ideal for brunch or dinner.

  • 1 tablespoon extra-virgin olive oil
  • 34 green onions (thinly sliced)
  • 5 oz. baby spinach (about 4 cups)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup Greek yogurt
  • 4 eggs
  • Crusty bread (for serving, optional)

Instructions

  1. Heat the extra-virgin olive oil in a large skillet over medium heat.
  2. Add the sliced green onions and sauté until softened but not browned, approximately 2-3 minutes.
  3. Stir in the baby spinach and sauté until wilted, about 1-2 minutes. Season with kosher salt and black pepper to taste.
  4. Incorporate the Greek yogurt until fully mixed into the spinach mixture.
  5. Create 4 indents in the spinach mixture using the back of a spoon.
  6. Crack an egg into each indentation.
  7. Reduce heat to low, cover the skillet, and cook until egg whites are set and yolks reach your desired doneness, around 5-7 minutes.
  8. Serve hot with toasted crusty bread if desired.

Notes

For a dairy-free alternative, use coconut yogurt. Consider adding feta cheese or nutritional yeast for extra flavor.
