A quick and comforting creamy spinach pasta recipe featuring rich flavors and vibrant greens, perfect for weeknight dinners.

  • 8 oz pasta (fettuccine or spaghetti)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté it until fragrant, about 1 minute—be careful not to let it brown.
  3. Toss the fresh spinach into the skillet. Cook until just wilted, which should take about 2-3 minutes.
  4. Reduce the heat slightly, then pour in the heavy cream. Let it simmer for a few minutes until it thickens a bit.
  5. Stir in the grated parmesan cheese. Mix thoroughly until the sauce is smooth. If the sauce becomes too thick, feel free to add a splash of the reserved pasta water.
  6. Introduce the cooked pasta into the creamy sauce. Toss well to ensure the pasta is evenly coated with the mixture.
  7. Finish by seasoning with salt and pepper to taste. Serve warm and enjoy!

Notes

For a lighter version, swap heavy cream for half-and-half. For vegan options, use nutritional yeast instead of cheese.
