A comforting blend of sweet potatoes, ground turkey, and coconut milk that is both nutritious and satisfying.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) coconut milk
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, stirring occasionally.
  3. Stir in the minced garlic and cook briefly until fragrant.
  4. Add the ground turkey and cook until browned, breaking it apart with a spoon.
  5. Toss in the diced sweet potatoes, cumin, paprika, salt, and pepper. Stir to combine.
  6. Pour in the broth and bring to a gentle boil. Reduce heat and simmer for about 15 minutes, until sweet potatoes are tender.
  7. Stir in the coconut milk and heat through. Serve warm and enjoy!
