A delightful dish combining tender chicken, silky pasta, and a creamy sauce with spinach and sun-dried tomatoes.

  • 1 lb chicken breast, diced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Begin by cooking the pasta according to package instructions. Drain and set aside when done.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced chicken and season with salt and pepper. Cook until browned and fully cooked through, about 5-7 minutes.
  4. Toss in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the heavy cream, bringing the mixture to a gentle simmer.
  6. Stir in the fresh spinach and chopped sun-dried tomatoes, cooking until the spinach wilts.
  7. Mix in the drained pasta and the Parmesan cheese, stirring until well combined and the cheese has melted.
