A quick and creamy dish featuring tender chicken, vibrant spinach, and a rich garlic sauce, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, packed in oil, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breasts generously with salt and pepper. Cook for 6-7 minutes on each side until they are golden brown and cooked through. Then, remove them from the skillet and set aside.
  3. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream and chicken broth, scraping up any browned bits from the pan to enhance flavor. Stir continuously for 2-3 minutes until the mixture thickens.
  5. Add the fresh spinach and grated Parmesan cheese, stirring until everything is melted and creamy.
  6. Return the seared chicken to the skillet, spooning sauce over each piece. Let it simmer for another 5 minutes to meld all the flavors together.
  7. Serve your creamy Tuscan garlic chicken over pasta or rice for a complete meal.

Notes

Pair with garlic bread and a garden salad for a complete meal. Best enjoyed fresh, but leftovers can be stored in an airtight container for 3-4 days.
