A family favorite that combines classic Chicken Parmesan flavors with a lighter, crispy baked twist.

  • 4 pieces boneless skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups marinara sauce

Instructions

  1. Preheat your oven to 400°F.
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Whisk the eggs in a shallow bowl until frothy.
  4. Mix the breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper in a separate bowl.
  5. Dip each chicken breast into the egg mixture, allowing excess to drip off.
  6. Coat the chicken in the breadcrumb mixture, pressing gently to adhere.
  7. Arrange the coated chicken on the prepared baking sheet.
  8. Bake for about 25-30 minutes until golden brown and cooked through.
  9. Top each piece with marinara sauce and mozzarella cheese in the last 5 minutes of baking.
  10. Return to the oven until the cheese is bubbly and melted.
  11. Let the chicken rest for 5 minutes before slicing. Serve with a fresh side salad or pasta.

Notes

For a vegetarian alternative, swap chicken for turkey or eggplant. Leftovers can be stored in an airtight container for up to 3 days.
