A classic Italian dish featuring crispy breaded chicken breasts topped with marinara sauce and melty mozzarella cheese.

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp whole milk
  • 1 cup seasoned Italian breadcrumbs
  • 0.5 cup finely grated Parmesan cheese
  • 0.33 cup olive oil
  • 2 cups marinara sauce
  • 8 ounces fresh mozzarella cheese (sliced into 1/4-inch thick rounds)
  • 0.25 cup fresh basil leaves (thinly sliced)

Instructions

  1. Preheat your oven to 400°F.
  2. Pat the chicken breasts completely dry with paper towels. If they’re large, pound them between two sheets of plastic wrap until they reach an even 1/2-inch thickness. Season both sides generously with salt and pepper.
  3. Set up a breading station with three shallow dishes: one for flour, one for the whisked eggs and milk, and the last for a combination of breadcrumbs and grated Parmesan cheese.
  4. Dredge each chicken breast first in the flour, shaking off any excess. Next, dip it fully into the egg mixture, allowing any extra to drip off. Finally, press it firmly into the breadcrumb mixture, coating both sides evenly.
  5. Heat olive oil in a large, oven-safe skillet over medium heat. Once the oil shimmers, carefully add the breaded chicken and cook for 3-4 minutes per side until the coating is golden brown and crispy.
  6. Remove the skillet from heat. Pour marinara sauce around the chicken and top each piece with slices of mozzarella cheese.
  7. Carefully transfer the skillet to the preheated oven. Bake for 15-18 minutes or until the cheese is melted and bubbly, and the chicken is cooked through.
  8. Garnish with fresh basil before serving.
