A delightful dish featuring tender chicken breasts with savory marinara and gooey melted cheese.

  • 4 boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika (optional)
  • ½ cup vegetable oil (for frying)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  1. Pound the chicken: Place each chicken breast between two sheets of plastic wrap and pound to an even thickness of about ½ inch.
  2. Prepare the coating: Set up three shallow bowls with flour, beaten eggs, and a blend of breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, and optional paprika.
  3. Coat the chicken: Dredge each chicken breast in the flour, dip it into the eggs, then coat thoroughly with the breadcrumb mixture.
  4. Fry: Heat vegetable oil in a skillet over medium heat. Fry the breaded chicken for 3–4 minutes on each side until golden brown. Transfer to a paper towel-lined plate.
  5. Preheat and assemble: Preheat the oven to 375°F (190°C). In a baking dish, spread marinara sauce, place fried chicken on top, and spoon additional marinara over each piece.
  6. Add cheese and bake: Sprinkle mozzarella and Parmesan cheese over the chicken and bake for 15–20 minutes until melted and bubbly.
  7. Garnish and serve: Remove from the oven and garnish with fresh basil. Serve hot.

Notes

For extra crunch, chill the breaded chicken for 10–15 minutes before frying. You can also swap marinara for alfredo sauce or add vegetables for variation.
