  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  3. Beat the eggs in a bowl. In a separate bowl, mix the breadcrumbs with grated Parmesan.
  4. Dip each chicken breast into the egg, allowing any excess to drip off, then coat it with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Fry the chicken for about 4-5 minutes per side or until golden brown.
  6. Transfer the fried chicken to a baking dish. Spoon marinara over each piece, then sprinkle with shredded mozzarella cheese.
  7. Bake in the oven for 20-25 minutes or until the cheese is bubbly and golden. Serve hot.

Notes

For a gluten-free version, substitute breadcrumbs with a gluten-free variety. Leftovers can be stored in an airtight container for 3-4 days.
