A delectable dish that beautifully marries crispy chicken with rich marinara sauce and gooey melted cheese, perfect for family dinners or a cozy weeknight meal.

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 0.5 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • To taste salt and pepper
  • For garnish: fresh basil leaves
  • For frying: olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Take the chicken breasts and place them between two sheets of plastic wrap. Pound them to an even thickness of 1/2 inch.
  3. Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and mix the breadcrumbs, grated Parmesan, oregano, garlic powder, salt, and pepper in a third dish.
  4. Dredge each chicken breast first in flour, then dip it in the beaten eggs, and finally coat with the breadcrumb mixture, pressing it to adhere well.
  5. Heat about 1/4 inch of olive oil in a large skillet over medium heat. Add the breaded chicken breasts carefully.
  6. Cook the chicken for about 3-4 minutes per side, or until golden brown and crispy. Drain the chicken on paper towels.
  7. In a baking dish, spread marinara sauce at the bottom. Place the chicken on top, spoon more sauce over it, and sprinkle shredded mozzarella cheese all over.
  8. Bake for approximately 20 minutes, or until the cheese is bubbly and golden.
  9. Finish by garnishing with fresh basil leaves before serving.

Notes

For a lighter version, bake the chicken without frying and use whole grain breadcrumbs. Leftovers can be stored in an airtight container for 3-4 days.
