A classic Italian dish featuring crispy chicken with a rich marinara sauce and bubbly mozzarella cheese.

  • 4 chicken breasts, pounded thin
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs
  • ½ cup grated parmesan
  • 1 cup mozzarella cheese, sliced
  • 2 cups marinara sauce
  • 2 tbsp olive oil
  • Fresh basil, for garnish
  • Salt, pepper, oregano to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Dredge each chicken breast in flour, making sure it is evenly coated.
  3. Dip the flour-coated chicken into the beaten eggs, letting any excess drip off.
  4. Coat the chicken with the panko and Parmesan mixture, pressing gently to ensure it sticks.
  5. Heat olive oil in a large skillet over medium heat. Pan-fry the chicken cutlets for about 3-4 minutes on each side, or until they are golden brown.
  6. Once browned, place the fried cutlets in a baking dish. Spoon marinara sauce lightly over the center of each piece.
  7. Top with sliced mozzarella and a sprinkle of Parmesan cheese.
  8. Bake in your preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh basil and serve hot.

Notes

For a lighter option, try baking the breaded chicken breasts instead of pan-frying them.
