A delightful dish that combines crispy chicken with rich marinara sauce and gooey melted cheese, perfect for family dinners or impressing guests.

  • 2 large boneless, skinless chicken breasts (halve horizontally)
  • To taste salt
  • To taste pepper
  • 1 cup all-purpose flour
  • 2 large eggs (beaten and whipped until frothy)
  • 1 cup Panko breadcrumbs
  • 1/2 cup fresh grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic (minced)
  • 1/2 cup neutral vegetable oil (like Canola)
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Prepare the chicken: Slice the chicken breasts horizontally to create thin cutlets.
  2. Season: Sprinkle salt and pepper on both sides of the chicken.
  3. Set up breading station: In one dish, place the flour. In a second dish, pour in the beaten eggs. In a third dish, mix Panko breadcrumbs, grated Parmesan, Italian seasoning, and minced garlic.
  4. Breading: Dredge each chicken cutlet in flour, shaking off any excess. Dip it into the egg, then coat generously with the Panko mixture, pressing gently to make it stick.
  5. Fry: Heat the vegetable oil in a large skillet over medium heat. Once hot, fry the cutlets for about 4–5 minutes per side or until they are golden brown and cooked through.
  6. Bake: Preheat your oven to 400°F (200°C). Once fried, transfer the chicken to a baking dish. Top with marinara sauce and sprinkle with mozzarella cheese.
  7. Finish in the oven: Bake for 10–15 minutes or until the cheese is melted and bubbly.
  8. Garnish and serve: Sprinkle with fresh parsley before serving.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes for best texture.
