A comforting and satisfying casserole that combines crispy panko topping, savory chicken, rich marinara, and bubbling cheese.

Ingredients

  • 3 large chicken breasts (about 1.5 lbs), cooked and chopped
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 2 1/2 cups marinara sauce
  • 1/2 tsp dried basil (optional)
  • 1/2 tsp dried oregano
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 1/2 cups panko breadcrumbs
  • 3 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 2 tbsp chopped fresh parsley (optional)
  • 1 cup shredded provolone or fontina cheese (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
  3. In a large mixing bowl, toss the cooked, chopped chicken with kosher salt, black pepper, and garlic powder.
  4. Spread the seasoned chicken evenly in the bottom of your prepared baking dish.
  5. Pour marinara sauce over the chicken. Optionally sprinkle with dried basil and oregano.
  6. Evenly distribute the shredded mozzarella and grated parmesan cheese over the sauce. If using, add provolone or fontina.
  7. In a separate bowl, mix the panko breadcrumbs, melted butter, garlic powder, and chopped parsley until well-coated.
  8. Scatter the panko mixture evenly over the cheese layer, gently patting it down with the back of a spoon.
  9. Bake uncovered for 25-30 minutes, until the topping is golden brown and the cheese is bubbly.
  10. Allow the casserole to rest for about 10 minutes before slicing and serving.

Notes

You can serve this casserole with a fresh green salad, garlic bread, or steamed vegetables.
