  • 1 cup Shredded Mozzarella Cheese (can substitute with cheddar or provolone)
  • 1 large Egg (or vegan alternative such as flax or chia egg)
  • 1/2 cup Almond Flour (can substitute with oat flour)
  • 1 teaspoon Garlic Powder (optional)
  • 1 teaspoon Salt (adjust to preference)
  • 1/2 teaspoon Pepper (or cayenne for extra kick)
  • 1 tablespoon Olive Oil (brush on tops before baking)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, shredded mozzarella, and egg. Stir until well blended.
  3. Add in the almond flour, garlic powder, salt, and pepper (or cayenne). Mix everything until you achieve a dough-like consistency.
  4. Scoop out small portions and shape them into balls, placing them on the prepared baking sheet.
  5. Brush the tops with olive oil to promote extra crispiness.
  6. Bake for 15-20 minutes or until the bites turn golden brown.
  7. Allow them to cool slightly before serving.
