A quick and easy dish where chicken is marinated in dill pickle juice and coated in Parmesan breadcrumbs, resulting in a crunchy, flavorful meal.

  • 1 cup dill pickle juice
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Marinate the chicken: Place chicken breasts in a bowl and pour dill pickle juice over them. Marinate for at least 30 minutes.
  2. Preheat the oven: Set your oven to 400°F (200°C) for baking, or heat oil in a frying pan for frying.
  3. Mix the coating: In a separate bowl, combine breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, and pepper until well mixed.
  4. Coat the chicken: Take each marinated chicken breast and coat it thoroughly with the breadcrumb mixture.
  5. Arrange for cooking: Lay the coated chicken breasts on a baking sheet or place them in the frying pan.
  6. Cook the chicken: Bake in the oven for 20-25 minutes, or fry for 5-7 minutes on each side until golden brown and cooked through.

For a healthier option, swap chicken for turkey or use whole wheat breadcrumbs. Marinating longer enhances flavor.
