A quick and satisfying dish featuring fluffy eggs, colorful veggies, and melted cheese all wrapped in a crispy tortilla.

Ingredients

  • 4 large eggs
  • 1 tortilla
  • 1/4 cup shredded cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Oil or butter for cooking

Instructions

  1. Whisk the eggs with salt and pepper until fluffy.
  2. Heat oil or butter in a skillet over medium heat.
  3. Add the diced bell peppers and onions, sautéing them until they soften.
  4. Pour the whisked eggs into the skillet, allowing them to cook until they start to set.
  5. Sprinkle shredded cheese on top, then carefully place the tortilla over the eggs.
  6. Flip using a spatula and cook the other side until it’s golden and crispy.
  7. Serve warm and enjoy every bite!

Notes

Leftovers can be stored in the refrigerator for up to three days. Reheat in a skillet over low heat to regain crunch.
