  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat the olive oil in a non-stick skillet over medium-high heat until it shimmers.
  2. Evenly sprinkle the crumbled feta cheese across the skillet, ensuring it covers the bottom.
  3. Cook the feta for 1-2 minutes until it starts to soften and the edges crisp up.
  4. Carefully crack the eggs on top of the feta, making sure to space them apart.
  5. Season the eggs generously with salt and black pepper.
  6. Cook for about 3-4 minutes, until the whites are set and the yolks are still runny. For firmer yolks, cook a bit longer to suit your preference.
  7. Optionally, sprinkle chopped parsley and red pepper flakes over the finished eggs.
  8. Gently slide the eggs and crispy feta onto a plate.
  9. Serve immediately and enjoy!

Notes

For a twist, switch feta with cotija or goat cheese. Store leftovers in an airtight container in the refrigerator for up to 2 days.
