A healthier take on the classic Chicken Parmesan made in the air fryer, offering great taste without the fuss.

Ingredients

  • 2 (6 oz) chicken breasts, cut into cutlets
  • 2 cups seasoned panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon granulated garlic
  • 1 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 23 large eggs
  • Olive oil cooking spray
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • Chopped basil and parsley for topping

Instructions

  1. Preheat the air fryer to 390°F.
  2. Combine the panko breadcrumbs, grated parmesan cheese, Italian seasoning, granulated garlic, chili powder, salt, and pepper in a shallow bowl.
  3. Whisk the eggs with a pinch of salt and pepper in another bowl until well combined.
  4. Pat the chicken cutlets dry, dip each into the egg mixture, and coat them in the breadcrumb mixture.
  5. Spray the air fryer basket with olive oil, arrange the coated cutlets in a single layer, and spray the tops with olive oil.
  6. Cook for 5 minutes, flip the chicken, spray again with olive oil, and cook for another 5 minutes.
  7. Spread tomato sauce over the chicken cutlets, top with shredded mozzarella cheese, and cook for an additional 2 minutes until the cheese is melty.
  8. Allow the dish to rest for 5 minutes before plating and serving.

Notes

To maintain the crispiness, reheat in the air fryer for about 3-4 minutes at 350°F.
