  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika (smoked or sweet)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh herbs (optional, such as rosemary or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. Generously season both sides of the chicken with salt, black pepper, garlic powder, and paprika.
  4. Place the seasoned thighs in a baking dish. Drizzle with olive oil and rub it evenly over the chicken.
  5. Bake in the oven for 35-40 minutes until internal temperature reaches 165°F (74°C) and the skin is golden brown.
  6. For extra crispiness, broil on high for an additional 3-5 minutes.
  7. Let the chicken rest for 5-10 minutes before serving.
