  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 pieces eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Begin by patting the chicken breasts dry with paper towels to ensure they fry up crisp.
  2. In one bowl, whisk the eggs until combined and fluffy.
  3. In another bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper until thoroughly combined.
  4. Dip each chicken breast in the egg mixture, allowing any excess to drip off, then coat them in the Parmesan-breadcrumb mixture, pressing lightly to ensure the coating sticks.
  5. Heat a generous amount of olive oil in a skillet over medium heat. Once the oil is hot, carefully place the coated chicken breasts into the skillet.
  6. Cook each side for about 5-7 minutes, or until they’re golden brown and cooked through.
  7. Once cooked, transfer the chicken to a plate lined with paper towels to absorb any excess oil. Let them sit for a minute before slicing, and enjoy warm!
