A quick and delicious recipe for Crispy Parmesan Crusted Chicken with a crunchy, cheese-laden crust.

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko)
  • 2 teaspoons garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1 teaspoon paprika
  • To taste salt and pepper
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 spray olive oil spray (or cooking oil for frying)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Prepare the coating by mixing Parmesan cheese, breadcrumbs, garlic powder, Italian herbs, paprika, salt, and pepper.
  3. Make the egg wash by whisking eggs and Dijon mustard together.
  4. Coat the chicken by dipping it into the egg mixture, allowing excess to drip off.
  5. Press the chicken into the breadcrumb mixture for a thick coating.
  6. Bake the coated chicken on the prepared baking sheet, lightly spraying the tops with olive oil.
  7. Cook for 25-30 minutes until golden brown and cooked through (internal temperature 165°F/74°C).
  8. Rest the chicken for a few minutes before garnishing with parsley and serving.

Notes

For added flavor, brine the chicken breasts in saltwater for an hour before cooking. Consider using fresh herbs or spices to customize the recipe.
