A comforting and effortless dish that combines chicken, rice, and cheese in a slow cooker for a delightful weeknight meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: vegetables (e.g. peas, carrots)

Instructions

  1. Place the chicken breasts at the bottom of your crock pot.
  2. Add the long grain white rice, cream of chicken soup, chicken broth, chopped onion, and minced garlic.
  3. Stir gently to combine and season with salt and pepper.
  4. Cover the crock pot and set it on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the shredded cheese and any optional vegetables you choose to include.
  6. Serve hot, mixing the chicken into the rice for a delightful bite on your plate.

Notes

Can substitute cream of chicken soup with a homemade version or another type of soup. Consider adding diced green chilies for a kick.
