  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced (any color)
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta (or pasta of choice)
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large bowl, place the chicken breasts. Drizzle them with olive oil and sprinkle on the Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the seasonings into the chicken thoroughly.
  2. Heat a large skillet over medium heat. Brown the chicken for about 2-3 minutes on each side to lock in the flavors.
  3. Transfer the browned chicken to the bottom of your slow cooker.
  4. Layer the sliced bell pepper, onion, and minced garlic on top of the chicken.
  5. Pour the diced tomatoes with their juices and chicken broth over the mixture.
  6. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is fully cooked.
  7. Once done, carefully remove the chicken, shred it using two forks, and return it to the crock pot.
  8. Stir in the heavy cream and Parmesan cheese until melted and creamy.
  9. Cook the penne pasta according to package instructions until al dente, drain, and mix it into the crock pot with the chicken and sauce.
  10. Let everything heat together for an additional 15-20 minutes on the low setting.
  11. Serve hot, garnished with freshly chopped parsley.

Notes

For a lighter version, try using skinless chicken thighs or Greek yogurt instead of heavy cream. You can also add cooked shrimp or mix in different vegetables like zucchini or spinach.
