A comforting slow cooker dish featuring tender chicken, garlic, rich cream, and pasta, perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 8 ounces pasta (penne or rotini)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Place the chicken breasts in the slow cooker. Season generously with salt and pepper.
  2. Pour in the chicken broth and stir in the minced garlic.
  3. Cover and set the slow cooker on low for 4 to 6 hours, until the chicken is tender.
  4. Remove the chicken and shred it using two forks. Set aside.
  5. In the slow cooker, add the pasta, heavy cream, and grated Parmesan cheese.
  6. Cover and cook on low for an additional 30 minutes, until the pasta is al dente.
  7. Return the shredded chicken to the pot, mixing everything together. Garnish with chopped parsley before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half. You can also add vegetables like spinach or sun-dried tomatoes for extra nutrition.
