A creamy and savory chicken dish made in a slow cooker, perfect for dinner on busy nights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 package (1 oz) ranch dressing mix
  • 1/2 cup cream cheese, softened
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped sun-dried tomatoes (optional)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Place chicken breasts at the bottom of your slow cooker.
  2. In a mixing bowl, combine cream of chicken soup, ranch dressing mix, softened cream cheese, and chicken broth until well blended.
  3. Pour the creamy mixture evenly over the chicken breasts.
  4. If using, sprinkle sun-dried tomatoes on top.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through and tender.
  6. About 30 minutes before serving, sprinkle mozzarella cheese on top, cover, and allow it to melt.
  7. Season with salt and pepper, then garnish with chopped parsley before serving.

Notes

For a lighter option, swap cream cheese with Greek yogurt, and for a different flavor, use cream of mushroom soup instead of cream of chicken.
