A creamy, tender chicken dish simmered with sun-dried tomatoes and garlic, perfect for busy weeknights or family gatherings.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes in oil (drained and chopped)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil (chopped)

Instructions

  1. Pat the chicken breasts dry with a paper towel.
  2. Mix together the salt, black pepper, garlic powder, and onion powder in a small bowl.
  3. Rub the spice mixture all over the chicken breasts.
  4. Place the seasoned chicken in the bottom of your 6-quart slow cooker.
  5. Add the minced garlic and chopped sun-dried tomatoes on top of the chicken.
  6. Pour the chicken broth around the chicken in the slow cooker.
  7. Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours, or until the chicken is tender and fully cooked.
  8. Shred the chicken in the crockpot using two forks or remove it to shred and return it.
  9. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and the cheese has completely melted.
  10. Turn off the slow cooker and mix in the fresh basil. Let it sit for 5-10 minutes for the sauce to thicken slightly.
  11. Serve hot and enjoy!

Notes

Serve over mashed potatoes or rice to soak up the sauce. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
