  • 4 pieces boneless skinless chicken breasts
  • 8 oz cream cheese (softened)
  • 1 cup parmesan cheese (or pecorino)
  • 1/2 cup sun-dried tomatoes (or fresh tomatoes)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning (or oregano and basil)
  • 1 cup chicken broth (or vegetable broth)

Instructions

  1. Place the chicken breasts at the bottom of your crockpot.
  2. In a separate bowl, mix together the softened cream cheese, parmesan cheese, sun-dried tomatoes, minced garlic, and Italian seasoning until smooth.
  3. Pour the creamy mixture over the chicken, ensuring each piece is well coated.
  4. Add the chicken broth around the edges of the crockpot.
  5. Cover the crockpot and set it to cook on low for 4-6 hours or on high for 2-3 hours.
  6. When it’s done cooking, shred the chicken right in the pot and serve.
