Crockpot Shredded Chicken

A simple and versatile shredded chicken recipe cooked in a crockpot, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 large sweet onion, chopped
  • 1 cup low-sodium chicken broth
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 cup BBQ sauce or salsa
  • Salt and pepper, to taste

Instructions

  1. Chop the sweet onion and mince the garlic cloves.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Layer the chopped onions and minced garlic at the bottom of the crockpot.
  4. Place the seasoned chicken breasts on top of the onion and garlic.
  5. Pour your choice of BBQ sauce or salsa evenly over the chicken.
  6. Add enough chicken broth to cover the chicken.
  7. Cover the crockpot with its lid, then set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  8. When ready, shred the chicken in the crockpot with two forks and mix with the cooking juices.

Notes

For added flavor, consider using different sauces or adding vegetables to the crockpot.
