Healthful and indulgent muffins packed with protein and natural sweetness from ripe bananas and maple syrup, perfect for breakfast, snacks, or post-workout fuel.

  • 2 ripe bananas
  • 1/2 cup maple syrup
  • 1/4 cup almond butter or peanut butter
  • 2 eggs
  • 1 cup rolled oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Add the maple syrup, almond butter, and eggs to the mashed bananas. Mix until well combined.
  4. Combine rolled oats, protein powder, baking powder, baking soda, and salt in another bowl.
  5. Gradually stir the dry ingredients into the wet mixture until just combined. Fold in chocolate chips or chopped nuts if desired.
  6. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Ensure your bananas are super ripe for the best flavor. Don’t overmix the batter; stir until just combined for fluffy muffins.
