Delicious Chicken Enchiladas

A comforting meal of chicken enchiladas filled with tender chicken, rich red sauce, and gooey cheese wrapped in soft tortillas.

  • 2 cups Cooked and shredded chicken
  • 1 can Red enchilada sauce (10 oz)
  • 2 cups Shredded Monterey Jack cheese
  • 8 pieces Flour tortillas
  • 1 tablespoon Vegetable oil
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • To taste Salt and pepper
  • Chopped cilantro (for garnish)
  • Sour cream (for serving)

Instructions

  1. Prepare the Chicken: Boil or bake your chicken until fully cooked. Once done, shred it using two forks or your fingers.
  2. Sauté Aromatics: In a skillet over medium heat, add the vegetable oil. Once hot, toss in the chopped onion and minced garlic. Sauté for about 3-4 minutes until soft and fragrant.
  3. Combine Filling: Stir in the shredded chicken along with cumin, chili powder, salt, and pepper to taste. Cook for another 3-5 minutes, mixing well to meld the flavors.
  4. Prepare Your Dish: Pour a small amount of red enchilada sauce into the bottom of a baking dish to help prevent sticking.
  5. Assemble Enchiladas: Take a flour tortilla, add a generous spoonful of the chicken mixture in the center, sprinkle with shredded cheese, and roll it tightly. Place the seam side down in the baking dish. Repeat for all tortillas.
  6. Add Sauce and Cheese: Pour the remaining enchilada sauce over the top of the rolled tortillas, and sprinkle with the remaining shredded cheese.
  7. Bake: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 20-25 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and slightly golden.
  8. Serve: Let the enchiladas rest for a few minutes before serving. Garnish with chopped cilantro and serve with a dollop of sour cream.

Notes

Feel free to substitute cooked chicken with a rotisserie chicken for an even quicker option, or use corn tortillas for a gluten-free version. For extra cheesiness, incorporate cream cheese into the filling.
