  • 1 cup Milk (Dairy or Non-Dairy)
  • 1 large Egg (or flax egg for vegan)
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Cinnamon or Nutmeg (optional)
  • 2 tablespoons Chia Seeds (optional)
  • Fresh Fruits (Berries, sliced bananas, or peaches)
  • Nut Butters (Almond or peanut butter)
  • Chocolate Chips
  • Spinach
  • Cooked Chicken or Tofu
  • Ricotta Cheese

Instructions

  1. Blend the gluten-free oats in a blender until they create a flour-like consistency.
  2. Add the milk, egg (or flax egg), maple syrup, and any optional spices like cinnamon or nutmeg. Blend until everything is smooth.
  3. Let the batter sit for about 5 to 10 minutes to thicken slightly.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour approximately 1/4 cup of batter into the skillet, swirling it to coat the surface evenly.
  6. Cook for 2 to 3 minutes until the edges lift and the crepe turns golden brown. Flip it and cook for another 1 to 2 minutes.
  7. Transfer to a plate and repeat the process with the remaining batter.
  8. Fill each crepe with your favorite toppings, fold, and enjoy!
