A delightful twist on a classic Italian favorite, this one-dish meal combines tender chicken, savory pasta, and gooey cheese with minimal effort.

Ingredients

  • 12 ounce package whole wheat penne pasta
  • 24 ounce jar pasta sauce
  • 23 cups water
  • 1 pound of chicken cut into small pieces
  • 2 cups shredded mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 cup bread crumbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425 degrees F.
  2. Spray a 9 x 13 baking dish with cooking spray.
  3. Combine the uncooked pasta, pasta sauce, and 2-3 cups water in the baking dish.
  4. Add the cubed chicken and 1/2 cup mozzarella cheese to the mixture.
  5. Season with salt and pepper, then mix everything together until it’s well combined.
  6. Cover the dish with aluminum foil and bake for 20 minutes.
  7. Uncover and bake for an additional 10 minutes or until the chicken is fully cooked.
  8. Sprinkle the breadcrumbs, remaining mozzarella, and Parmesan over the pasta dish.
  9. Bake uncovered for another 10 minutes or until the cheese melts and the breadcrumbs turn golden brown.

Notes

Serve with a fresh salad or garlic bread for a complete meal. For a lighter option, consider using gluten-free pasta or substituting with Greek yogurt.
