A quick and delightful recipe combining eggs, savory sausage or bacon, and cheese wrapped in warm tortillas, perfect for brunch or busy mornings.

Ingredients

  • 8 small tortillas
  • 6 eggs
  • 1 cup shredded cheese
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Sour cream for serving
  • Salsa for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat and add the diced onions and bell peppers. Cook for about 3-4 minutes until they’re softened.
  3. In a bowl, whisk together the eggs with salt and pepper. Pour this mixture into the skillet with the onions and peppers. Scramble until fully cooked, approximately 3-5 minutes.
  4. In a baking dish, arrange your tortillas. Fill each tortilla with a scoop of the scrambled egg mixture, adding the cooked sausage or bacon next, then top it all off with the shredded cheese.
  5. Bake in your preheated oven for around 15 minutes, or until the cheese is melted and bubbly.
  6. Serve hot with a dollop of sour cream and a side of salsa for dipping.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for best results.
