A delightful and easy-to-make breakfast featuring cheesy, egg-filled tacos that bring family together.

Ingredients

  • 6 small flour or corn tortillas
  • 6 eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup cooked sausage or bacon (optional)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Salsa and sour cream for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and milk until combined. Season with salt and pepper to taste.
  3. Fold in the cooked sausage or bacon (if using), bell peppers, shredded cheese, and green onions to create a vibrant filling.
  4. Arrange the tortillas in a greased baking dish. Carefully fill each tortilla with the egg mixture until they are almost full.
  5. Bake for 20-25 minutes, or until the eggs appear firm and slightly fluffy, and the edges of the tortillas are crispy.
  6. Allow to cool for a few minutes before serving with salsa and sour cream, if desired.

Notes

For a healthier option, swap in whole grain tortillas or add kale. Leftovers can be stored in the fridge for up to three days.
