Delightful breakfast tacos filled with scrambled eggs, sausage or bacon, and colorful bell peppers, wrapped in warm tortillas and topped with melted cheese.

Ingredients

  • 8 small corn or flour tortillas
  • 6 eggs
  • 1 cup shredded cheese
  • 1 cup cooked breakfast sausage or bacon, crumbled
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat and sauté the diced onions and bell peppers for about 5 minutes, until they soften.
  3. Whisk together the eggs, adding a pinch of salt and pepper.
  4. Mix the crumbled sausage or bacon into the skillet with the veggies. Pour the egg mixture over everything and stir gently for about 3-4 minutes until the eggs are just set.
  5. Arrange your tortillas in a baking dish and fill each with the egg and sausage mixture.
  6. Sprinkle a generous amount of shredded cheese on top of each filled tortilla.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Serve warm with sour cream and salsa on the side for dipping.

Notes

For a vegetarian option, replace meat with black beans and add diced tomatoes. If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days.
