A simplified, healthier take on the classic Chicken Parmesan, perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon salt (for chicken)
  • ¼ teaspoon freshly ground black pepper (for chicken)
  • ½ cup all-purpose flour
  • ½ teaspoon salt (for flour)

  • 2 large eggs, whisked with 1 tablespoon water or milk
  • 1 ½ cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups marinara sauce, warmed
  • 2 cups shredded low-moisture mozzarella cheese
  • Fresh chopped parsley or basil (optional)
  • Cooking spray or a drizzle of olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil and lightly grease it.
  2. Create your breading stations: In one dish, mix together the flour, salt, and pepper. In a second dish, whisk together the eggs with water or milk. In a third dish, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, and onion powder.
  3. Prepare the chicken: Pat the chicken breasts dry. Butterfly and pound them to an even thickness if needed. Season with salt and pepper.
  4. Bread the chicken: Dredge each cutlet in the flour, dip in the egg wash, and press into the breadcrumb mixture. Arrange on the baking sheet without overlapping.
  5. Bake the chicken: Place in the oven and bake for 15-20 minutes until mostly cooked and golden brown. Meanwhile, warm the marinara sauce in a saucepan.
  6. Top with sauce and cheese: Remove the chicken and spoon marinara sauce over each cutlet, then top with mozzarella and a sprinkle of Parmesan.
  7. Final bake: Return to the oven and bake for another 8-12 minutes until the cheese is melted and bubbly. Ensure the internal temperature reaches 165°F (74°C).
  8. Serve and enjoy: Let rest for 2-3 minutes before serving. Garnish with parsley or basil if desired.
